Breakfast:
Strawberry Baked Oatmeal – 130 cal – I prep it for the week on Sunday. I have it with a little syrup.
Lunch:
Greek Chicken Salad – 350 cal – Chicken, farro, lettuce, cucumber, roasted red pepper and onion, olives, hummus, homemade tzatziki- I chop the veggies, make the farro, and make the tzatziki in big batches on Sunday so the salad can be tossed together.
Apple and peanut butter!
Dinner:
Chicken Andouille Sausage with onions and coleslaw mix – 325 cal
Not pictured:
Stroopwafel – 150
Orange – 50
Premier Protein as creamer in my coffee – 40ish
Cucumber lime vodka and strawberry soda – 75
Not enough calories today, should have had more carbs at dinner.
Definitely having a cornflake cluster later!

What coleslaw mix/recipe are you using? That looks amazing
I’ve found myself enjoying losing weight more the more I embrace my Midwestern and eat potatos/baked ham/broth/onions/turnips/etc.
Ohh I have been wanting to make baked oats. What do you put in yours?
I love your meal ideas, sounds so yummy ! I’m going to have to try them. How of the oatmeal is considered a serving 1 cup or more ?
