I fixed the side burner after like 4 years and am grilling tonight, what can I/should I make on it?

    In the 40 years I’ve been alive, I’ve had maybe a solid 15-years grilling and had side burners. I can honestly say I don’t think I have ever used one lol

    Ok bro I’m gonna give you the best appetizer ever! Straight from Argentina 🇦🇷

    Provoleta: 1 lb single deli slice provolone, parsley, oregano, garlic, cast iron skillet. Fry it in the pan until it melts and browns on the edges and serve with sliced baguettes (or pita chips or even warm flour tortillas).

    Aka queso fondido, you can also cook chorizo and throw it on top of the provolone if you’re a savage, which I am.

    When I’m cooking steaks I don’t pre-cook it so people are around and hungry – it’s good to give them something to munch on that is easy and doesn’t distract from the cook and compliments the main course.

    I used mine last night to sautee peppers and onions for hot dogs, it worked well! First time I’ve used it in the 1.5 years I’ve had it. I only used it so the house wouldn’t smell like onions, ha!

    I throw my cast iron on it to sear steaks or cook smash burgers. Keeps from splattering grease and stinking up the house.

    Throw a cast iron pan on it, get it screaming hot, and reverse sear the steaks your about to grill.

    I’ve used them in the past to saute mushrooms and onions in butter to top up some burgers and dogs.

    I pan cook bacon and fish on mine so the house doesn’t smell.

    When I make fajitas I pan cook the onions and peppers on that. Also if I make salsa and have to boil hot peppers I use that bad boy to not gas out my house.

    20 years of grilling and I’ve used a side burner maybe twice, I finally bought a decent grill recently and saved some money leaving out the side burner option 🤷‍♂️

    Heat up all your dry spices, I mean salt, paprika, pepper, garlic (fresh or dried) whatever you have. It’s ideal!

    Honestly idk lol. The first thing that came to mind was veggies but they’re better on the grill, then I thought of bacon for burgers and I personally prefer my bacon cooked in the oven. The next two things on my mind that I would actually do regularly is sear a steak and cook a fried egg to top burger

    Collard greens! Stinks up the house if you cook em inside so this burner is perfect.

    I’ve used it for bacon when cooking burgers. I also use it to char peppers directly in the flame (removing the grate part makes it easier) and to roast marshmallows for s’mores with the little one.

  25. Small pot… Olive oil and whole garlic cloves… cover and low heat. Goes with many things or just spread on bread.

    Sausage on the grill, peppers and onions on the side burner. Heat the rolls on top grate for the last minute and you’re all set.

    My problem is I only have one side burner at the moment.

    Any time I’m making burgers, hot dogs or sausages on the propane grill then I always use it to sautee veggies, especially onions and garlic as to avoid smelling up the house too bad (I don’t have a range hood).

    Additionally I render down fat into tallow/lard when I trim up brisket/other fatty meats for the smoker (again to avoid stinking up the house).

    Anything your wife doesn’t eat. You have your own little kitchen out there and you can saute all the goddamn mushrooms you want.

    I live in central Florida and use mine all the time to keep humidity and grease out of the house. Steaming vegetables. I use a wok for stir fry and for deep frying French fries and steak Milanesa. Boiling new potatoes or artichoke hearts or even pasta. Couldn’t live without it, and can’t believe the lack of imagination of others.

    What are you making?

    If it’s pork consider a cherry bourbon sauce. Finely dice a shallot, once softened add a spoonful of sugar, cpuple grinds of salt, a splash of Worcester sauce, a heft pour of bourbon (something as simple as Evan Williams is fine) and a few hefty spoonfuls of cherry preserves. Simmer on low and reduce. Pour over meat

    Blackened Tuna or Swordfish. Get it white hot and keep your house from smelling like a fish market!!
