I find that the density of a bagel doesn’t lend itself well to the delicate nature of the egg in the sandwich. Rather than enveloping the egg it find that when bitten into the bagel tends to displace the egg in a blowout fashion. Thats why bagels are a better vehicle for schmears and the like. I could be in the minority work this take for sure.
