I picked up a copy of “Essentials of Classic Italian Cooking” and have been banging through the pasta section. I love how a few simple ingredients can come together to make something so complex in flavor. Quality of ingredients really does matter here.
In order: 1.) Porcini mushroom and tomato sauce with homemade pasta and meatballs. 2.) Smothered onion sauce with a pan fried NY Strip and romaine gorgonzola/walnut salad 3.) Pesto with an interesting shaped pasta found at a local Italian store 4.) Clam and wine sauce 5.) Porcini mushroom and tomato sauce (again) on rigatoni.
