Ingredients

⅓ cup olive oil

2 teaspoons lemon zest

¼ cup fresh lemon juice

2 tablespoons chopped fresh oregano

1 tablespoon Dijon mustard

1 tablespoon honey

¾ teaspoon garlic salt

¼ teaspoon ground black pepper

12 oz orzo pasta cooked according to package directions and rinsed with cold water

2 chicken breasts

2 tbls greek seasoning or 

(1 tsp lemon pepper, 2 tsp garlic powder, 1 tsp oregano, 1/2 tsp paprika)

1 cup sliced halved English cucumber

1 cup halved grape tomatoes

½ cup halved pitted kalamata olives

¼ cup chopped fresh parsley

5 ounces pkg crumbled feta cheese

Directions

Season your chicken breasts with salt, pepper, and greek or souvlaki seasoning. Bake 350° for 30-40 minutes. Internal temp should be 160°. Let chicken rest before slicing or cubing. 

In a large bowl, mix together olive oil, dijon mustard, honey, lemon juice, lemon zest, parsley and oregano. Stir in tomatoes, olives and cucumber. Stir in cooked and cooled orzo and feta.

Top each plate with sliced chicken or cube chicken and mix throughout the salad. Serve immediately, or cover and refrigerate for up to 2 days.

  6. as a greek looks very good i do marinade my chicken in lemon and garlic and other seasonings overnight with a heavy object holding the chicken down like a brick wrapped in foil or any heavy object they also sell shawarma seasoning glad your back its gus again great job on the greek food

  9. I'm really enjoying all of the cooking videos. We are having your air fryer country style boneless ribs, brown butter egg noodles and broccoli recipe I just found for dinner tonight. I would love to see some videos on some of your low or lower carb meals that I've seen delicious looking pictures of if possible. If you have any tips or recipes for getting kids to try new things that would be super helpful to. I can't wait to see what great things you two do next.
