Pie:
1/2 cup bisquick baking mix
1/4 cup white granulated sugar
3/4 cup milk
2 tbsp softened butter
1/4 to 1 tsp almond extract
2 large eggs
1 can (21 oz) Cherry pie filling – drained (keep the liquid)
Streusel topping:
1/4 cup bisquick mix
1/4 cup packed brown sugar
1/4 to 1 tsp cinnamon
1 tbsp or 2 tbsp softened butter
(stir together the bisquick, brown sugar and cinnamon together, cut in the butter and blend until you get coarse crumb texture, I started off with 1 tbsp of butter and added a second one because I thought it looked too dry, I forgot to mention this in the video).
Drain the cherries from the pie filling, reserve the liquid.
Combine the 1/2 cup bisquick, white sugar, milk, eggs, almond extract and 2 tbsp butter together in a small bowl (a whisk works best).
Pour this into a 9 inch greased pie plate.
Spoon drained cherries around the pie. Place several 1 tsp dollops of the cherry pie filling liquid around the pie (optional).
Bake for about 20 minutes at 400 F. Remove from oven and top with the Streusel topping. Continue to bake until a knife inserted in the center comes out mostly clean and the streusel has browned a bit.
Allow to cool completely before slicing.
Keep refrigerated.

That looks so good! I might be tempted to skip the struesel topping and go with a dusting of powdered sugar instead, and then top with a scoop of vanilla ice-cream and a drizzle of the leftover cherry filling. πππ₯§

I long believed that Bisquick mix was primarily used to make biscuits. But since that you just made a pie out of that mix, Iβm glad to hear that it didnβt taste really flaky and soft, like most biscuits are!
