I was experimenting and chucked some PB2 in my usual low cal waffle recipe – AMAZING.
Waffles are 1/3 cup of oats, 1/3 cup of Greek yoghurt (I use low fat), 1 egg (you can get lower by using egg whites but I cannot be bothered), 1/8 tsp of salt, cinnamon, and baking powder. The best part is you just throw all of this in a blender then pour into a waffle iron.

I used a tsp of PB2 and serve with a tiny bit of 0 cal syrup and plop a big spoonful of yoghurt on them. It feels like a big decadent cheat meal but it’s full of protein and fibre + no sugar or flour!

    I use pb2 in baking + yogurt a lot but I didn’t think to put them into waffles!! I’ll have to try your recipe, though I don’t have a blender for the oats so I might sub with whole wheat flour.

    And we love tropical fruits. I’m jealous, it’s been some months since I’ve had dragonfruit.
