Keto Strawberry Jelly ~ Gluten free Low carb & Sugar free

Boils down to about .75 of a carb per Tbs. So less than 1 carb per Tbs.

Ingredients “Full jar”

1 Cup water
2 Cups berries “Fresh OR Frozen”
2/3 allulose
4 tsp lemon juice
Add after taken off heat ⬇️
1 1/2 tsp xanthin gum

Ingredients in video “half jar”

1/2 cup water
1 cup berries “Fresh OR Frozen”
1/3 cup allulose
2 tsp lemon juice
Add after taken off heat ⬇️
3/4 tsp xanthin gum

  1. Thank you ❤️. Made this with frozen bing cherries but plan to buy no sugar added juice next time. I also subbed ⅛ teaspoon of agar agar for the xanthan gum, even though I had some of that as well. Will be lovely to serve to the kids with homemade yogurt. I love that I don't have to use a bag of full sugar and make a thousand jars like most traditional jelly/jam recipes.

My birthday is this Tuesday & tomorrow I’m going to take your chocolate cake & tweak it to make a red velvet cheesecake w/cream cheese icing. I’d love to see a red velvet recipe from you.   8. I do make a strawberry jelly/jam too, however I don't use the xantham gum, never even thought about it. However if you just cook the berries down a bit and then use a stick blender to blend it all. Then refrigerate it. It thickens up on its own. the secret is to cook it until a good portion of the water has cooked out.

  9. Soooooooo good!!!! Why should I buy the store bought stuff again when i can make it and it tastes THIS GOOD and takes about the same amount of time it would have taken me to drive to the store?!?!!?!
