Yes it’s not the most presentable but my god is it delish and filling. All you need is a blender and a pot

Recipe:

  • 200g of light cottage cheese
  • 2 eggs
  • dill, half a garlic clove, red pepper flakes, salt and pepper
    Optional: a drizzle of olive oil, cucumbers, bread

Boiled two eggs until they reach a soft boiled state (approximately 5-6 mins) or alternatively, poach them. Add your cottage cheese, garlic clove, dill, salt and pepper and blitz until the cottage cheese is creamy. If it’s too stiff, add a bit of water to make it creamier to your liking. Plate it up and enjoy with red pepper flakes and if you want, a drizzle of olive oil.

    Note: Yes you can of course make this with normal greek yoghurt like the OG recipe calls for but I love cottage cheese and I feel like it scratches an itch for cheese that my 1700 kcal diet needs.
