I’m a soup girly year round – cold soup in the summer is a favorite (wild, I’m aware).
Anyways, farmers market season is upon us so I thought I’d share one of my favourite recipes with a breakdown! This is a butternut squash soup that is delicious, creamy, low fat, low carb, and has a healthy protein serving. The recipe is as follows:
- 2x butternut squash
- 1x medium yellow onion
- 1.5x small apple (or one large one)
- 1x large carrot
- 3x broth of choice (I used a bone broth because that’s all I had)
- 1-2 cups of water
Spices to taste:
– pepper
– paprika
– coriander
– cinnamon (trust me)
– nutmeg
For the ‘cream’
– 1 cup dry cottage cheese curds
– 1/4 plain Greek yoghurt
– 1/8 cup water
Then I shredded two large chicken breasts up and divided them between the six containers. Each dish has about 1 3/4 cups of soup in it give or take, plus the chicken.
Freezes great, makes your house smell delicious while cooking it, and tastes great! Happy cooking 🫶🏼
