
I was curious about the progress of fermentation over time, so I took a time-lapse video. This video started right after adding flower and water to the starter and right after the last stretch-and-fold of the dough.
Both containers are on a pet warming mat which heats the contents of each to about 83/85 F.
the video was filmed over about four hours.
The bulk fermentation "boiling" effect surprised me.

I don’t know if a recipe is needed for this, but the starter is a standard 100g/100g/100g. Dough is 2/3 bread flour 1/3 ap, 75% water, 2% salt, 15% starter.
