Chili Garlic Lettuce Boats – 429 cals

    Okay I love this community and yall were so supportive last time I posted!

    I’m back after a few days of eating cereal and processed stuff. I was desperately needing something fresh and green! Question: do you all count things like lettuce, cucumber, cilantro etc. or are they considered neutral?

    RECIPE 🙂

    **Assemble raw:**

    – 4 x romaine leaves (5 cal)

    – 1/2 Avocado (120 cal)

    – 100g cucumber, spiralized (15 cal)

    **Tofu pepper mix:**

    – half block medium tofu, pressed (175 cal)

    – 60g sliced red bell pepper (18 cal)

    – 1 teaspoon olive oil to coat (40 cal)

    *Combine in a bowl with black pepper, seasonings (optional). Toss to coat.*

    *Throw in a 400F/200C air fryer for 10-15 min until desired crispiness*

    **Top with:**

    – 1 tbsp spring onion (2 cal)

    – Sprinkle cilantro (2 cal)

    – Sprinkle sesame seeds (10 cal)

    **Sauce:**

    – 1 tbsp soy sauce (25 cal)

    – 1 tbsp chili garlic sauce (brand is Lee KumKee) (15 cal)

    – 1 tbsp honey garlic (40 cal)

    – 1-2 tbsp water

    *so the total sauce is 80 cal but I only used 6-8 tsps total or about 42 cal. I’m just bad at cooking for one sometimes :’)*

    **TOTAL: ~429 calories**

    Oh and wear your least fav shirt because these are messy!
