If you’re not spatchcocking your chicken, then you’re totally missing out! Roasted with fresh citrus, herbs and compound butter, this recipe is a home run.
Spatchcocking is a process where you remove the spinal column of the bird. This allows it lay flatter when roasting resulting in more even and quicker cooking. Plus, more of the skin’s surface area is exposed during roasting, resulting in extra crispy skin!
