My local Costco is selling “American Wagyu” for $6.99lb so I figured I’d give it a shot.
It’s a trip because there was almost no fat cap and relatively little fat ended up in my drip tray. I was a tad worried that I’d gotten hosed and it would be dry as a bone.
Quite the contrary. It’s beef foie gras. Melt in your mouth decadence. I ate two slices of flat and I think they took a few months off my lifespan.
Seasoned with a base of Meat Church Hot Honey Hog, then a thick layer of MC Holy Cow.
Smoked at 200 from 11am until dawn the next day, then raised to 225 and wrapped at 175. 22-23 hours total.
Rested for six hours in the cooler. Sliced at about 150 internal.
