I am so excited today, I got my ice cube trays in the mail.

For me, the silicone ice cube trays to make the perfect sized petit four and mug cake snacks. And since they are oven safe, I can bake in them.

Approximately 1 inch hexagons and 2 inch roses. So pretty.

Very excited!

    This post is less of a recipe, and more a cake pan. But my standard keto mug cake recipe is as follows.

    1 tablespoon fat,
    one egg.
    Whisk.

    Add dry ingredients.

    4 tablespoons almond flour,
    Appx 1/4 tsp baking powder,
    vanilla or other flavor,
    and sweetener.

    Mix thoroughly.

    Microwave for 90 seconds, I usually put it in for twice the length at half the power, and the cake should be finished.

    My intention is to dust the tops of the roses with cocoa powder. That should be pretty.

    Edit: For giggles, my recipe!

    2x blocks cream cheese, fully softened

    1c heavy cream

    1 package sugar-free Jello flavor of your choice. I prefer raspberry, strawberry, or lime.

    Mix the cream cheese with a mixer well, about 3-4 minutes. Add the cream and Jello mix gradually in 1/3rd batches, mixing and scraping the sides of the bowl until the mixture is fluffy and soft.

    I’ve had the best luck with putting the cheesecake mix into a plastic bag and cutting a corner off as an improvised piping bag. Smooth and fill out any cracks with the edge of a knife or a silicone spatula, and stick them in the freezer until frozen.

    Strawberry flavor tastes literally like strawberry ice cream. It’s fantastic!
