Meso’s Country Southern Fried Corn

9 Ears Corn
1 Stick Butter
1/3 Cup Flour
1 Cup Water (can use milk)
2 Tbsp. Oil (or bacon drippings)
1 Tbsp. Sugar (optional)
Dash Salt (optional)

Wash and strip corn of strands of sears as much as possible, a few left behind present no problem. Cut corn from cob making sure to scrape the cob completely as seen in video. Melt butter and add oil to pan (cast iron would be excellent). Mix cut corn with all other ingredients and combine thoroughly. Pour into hot oil and cook for 7 minutes (stirring through the entire time). Remove from heat and Enjoy!

  7. My late mother-in-law used to make the best fried corn and included green peppers in hers. A bonus was that my hubby didn't like fried corn, so she would make it especially for me.

  8. I'm from the Carolinas, and this is indeed fried corn. Round my neck of the woods, you can fry it in butter, bacon drippings, or fatback grease….it is all tasty. The last two options will give you a smokey sweet corn.

  11. I love Southern fried corn! I learned to make this from my Mother-in-law, but never used flour. With fresh harvested bicolor super sweet corn, you don't need sugar. With corn from most supermarkets you really do. And she had us barely cut the tops of the kernels which makes for more juice. My personal secret ingredient is one tiny shake of habanero powder.
