Interesting process. Most difficult part is to wait 5-7 days to try !

Do not wait that long to try. Trying them is the only way you’ll determine for yourself what is too early and what isn’t and recognizing how they change. That’s part of the learning process. They will be a little effervescent before day 3 but it all good fun. I have zero qualms about day 3 coffee. People will tell you different especially roasters that have to ship, but at my house they peak around day 6-7 and are noticeably deteriorating by day 14.

I am no expert but there is quite a bit of uneveness in the roast, are you using high quality beans yes? It also might be that your drum was spinning too fast leading to pittle contact for the beans
