First time smoking pork butt! Cooked a couple 4-5 pounders today. Weather was not playing nice – intermittent showers, windy, and mid 50°’s. The MM36 held steady, and I got some great smoke from the smoke box. Used hickory pellets and pecan chunks.

Took about 9 hours total, about 6 hours unwrapped at 225° until I was happy with the bark/fat cap splitting (170° IT) and then another 3 hours wrapped at 275° to reach 203° IT, at which point it was probe tender. Rested for 3-4 hours wrapped in a cooler. Shredded easily and made some pulled pork sandwiches. Overall really happy with it, came out super juicy, tender, and packed with flavor.
