Recipe

  • 1 cup almond flour
  • 1/8 cup vital wheat gluten
  • 3/4 cup Maltitol
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon vanilla extract
  • 1 egg
  • 1 stick butter
  • 60 g 78% dark chocolate bar

Experimenting with this Maltitol sugar alcohol stuff. I definitely think I like it more than Erythritol. Approx 5 net carbs per cookie, or 20 in the batch. They were not terrible!

    Oh right, instructions. Chop the chocolate, combine everything, bake at 375° F for like 15 minutes ish. They take a little longer than regular flour cookies.

    Be careful with maltitol, it can spike your sugar just as much a normal sugar and knocks people out of ketosis often.

    Heavenly looking cookies. One concern — while maltitol tastes great, it is known by many to cause blood sugar spikes equal to or worse than straight sugar. There are many posts regarding this on the r/keto sub.

    If that’s a concern, it may be worth sticking to a more “safe” (lower glycemic index) sugar alcohol. Allulose and monk fruit are a couple of safer options that taste better than erythritol imo.

    You probably need to refrigerate the dough or the formed cookies before baking. The fats are too soft when you bake so the cookies don’t hold their height. But I would still destroy these cookies

    Maltitol is horrible on my gut. I think it’s got the word Mal in there for a reason. I avoid that stuff like the plague.
