Picked up this elk steak and was wondering best seasoning/marinade and way to cook?

    I’d look at cooking lean beef steaks or venison steaks. Expect it to be a little gamey.

    I would sous vide it, then finish it with a quick sear on the grill or on a cast iron skillet

    35 dollars a pound is a hefty premium price. I’m not familiar with elk meat, but that looks like it’ll be tough without the marbling
