Ramps were delicious, the rest of the recipe was A LOT of work and really mediocre.
I think that makes his recipes like 97 for 98.
Can’t win ‘em all.

I love this recipe.
We make it every spring, really looking forward to it this year but it’s still too early here.

This dish hinges completely on the quality of your produce. For a dish like this to work, you want each vegetable to be delicious on its own. The accoutrements are just there to enhance what are essentially just plain blanched vegetables, the vegetables should be delicious on their own simply blanched with a bit of salt. If they are, then you have a divine spring salad that encapsulates the best of spring vegetables. If not, then you have a bland salad that isn’t really worth making.
Interesting to think whether you failed the recipe or the recipe failed you 😛
