I used the Paesana New York White Pie Sauce. Fresh mozz and shredded low moisture mozz, with a tiny bit of cheddar blend for color.
Are there certain toppings I should use to make a traditional white pie? Any input is greatly appreciated.

    A white pie should be a sauceless pizza with whole milk low moisture mozzarella and whipped ricotta cheese. Flavor can be enhanced with some kind of herb infused garlic olive oil.

    It’s possible that I’ve been using the term wrong all these years, but my understanding is that it refers to the sauce you use. Cream-based (white sauce) for a white pie, and tomato-based (red sauce) for a red pie.

    My first job was at a chain pizza place and someone once called in asking if we had white pizza. I know now that I could have made one, but at the time I thought it was some weird racist thing and I just said “no”

    Traditionally, it’s garlic and olive oil instead of sauce. But for me, I like to use heavy cream reduced with garlic until the garlic is cooked and the sauce is thicker for spreading. A little salt and grated Parmesan added and this is a much better way to go.

    Depends on region. Sauceless is commonly refered to as white or “bianca”. A lot of new york whites and canadian (where i live) are cheese pizzas with garlic cream, alfredo or no base. In some cases traditional roman pizza bianca or ‘white’ is literally a disc of baked dough stretched flat and topped with olive oil and salt. Its not a pinned down thing worldwide.     Pizza place i used to work at had a white pie, it was

    Olive oil, minced garlic, salt and pepper base

    Mozzerella

    Artichokes

    Roasted garlic

    Reggiano cheese

    White pie in my area is strictly defined as no sauce, only garlic and oil, normal pizza cheese (mozz, parm, or other blend), with ricotta treated as a topping instead of a cheese.

    Any non-tomato sauce (alfredo, buffalo, etc.) disqualifies it as a white pie, even if the sauce is white.
