Breakfast: 250 cal
Baked oatmeal – 180 calories for the base, added probably 60 calories (per serving) worth of chocolate chips to the recipe this week. Meal prepped for the week on Sunday. Sometimes I make a homemade jam to top it with instead.

Lunch: 500 cal
Street corn chicken salad, about 240 for 1 cup – meal prepped for the week on Sunday. I divide it between two Mission carb balance tortillas. Plus an apple. And peanut butter.

Dinner: 400 cal
Johnsonville Chicken Andouille Sausage and sautéed onion and coleslaw mix with creole seasoning

Not pictured: Stroopwafel as a snack, and probably a Girl Scout cookie later this evening. And maybe something else because tomorrow is a big workout day and this definitely isn't enough food 😬
