This amazing matcha green tea cheesecake is so easy to make and perfectly smooth and creamy. I love baked cheesecakes and matcha, had to combine them both! I dedicate this recipe to all the matcha lovers or anyone who is ready to try a new cheesecake recipe with a twist💚
📌 Ingredients to make green tea cheesecake (for 9-inch cheesecake pan)
The crust:
• Melted butter: 100 g | 3.5 oz (7 Tbsp)
• Graham crackers: 180 g | 6.3 oz (12 sheets)
• Granulated sugar: 25 g | 0.9 oz (2 Tbsp)
[Optional] Bake at 340ºF (171ºC) for about 8 minutes until the edges are slightly golden brown.
Cheesecake filling:
• Matcha powder: 12g | 0.4 oz (2 Tbsp *Level the surface.)
• Granulated sugar: 200 g | 7 oz (1 US cup)
• Cream cheese: 675 g | 23.8 oz (3 8-oz blocks)
• Heavy cream: 320 g | 11.2 oz (1 1/3 US cups)
• Cornstarch 16 g | 0.6 oz (2 Tbsp *Level the surface.)
• Yolks: 30 g | 1 oz (2 yolks)
• Egg: 100 g | 3.5 oz (2 eggs)
For Decoration on Top:
• The cheesecake filling: 1 Tbsp
• Matcha powder: 1/4 tsp
** For best results, measure ingredients with a scale. All recipes are designed with weighed ingredients using grams/ounces. Cup measurements are provided for your convenience. **
Bake at 325ºF (162ºC) for about 70 minutes with a water bath until it wobbles and bounces when you tap the side gently.
* Adjust the time and temperature accordingly, depending on the oven, the size of the pan, etc.
