Pass the hazelnut butter obtained through a sieve to filter out any unblended pieces and thus obtain the smoothest butter possible (image 3 is the final result I got). You can use this to make gelato too. 3. Pass sugar, cocoa and lecithin through a coffee or spice grinder. 4. Mix the powder obtained into the hazelnut butter (it will be solid). 5. Melt the butter and mix it into the mix (it will start to look like a solid cream). 6. Add the milk and mix it until you obtain the desired creaminess (remember that in the fridge the contents will solidify a little so the creaminess must be greater than what you think is correct). 7. Run the blender one last time to mix everything perfectly.
The result will be a cream that will resemble the best hazelnut creams (such as Novi cream), the hazelnut flavor will be intense (much more than in Nutella) and the sugar content will be far lower than in Nutella.
