
I love these as a snack or a meal and plenty of protein! I have also made a ham, cheddar and broccoli variation of these too.
Scramble two eggs in a bowl with salt and leave out for 15 minutes. Leaving the eggs like this will ensure they will be fluffy without too much moisture.
Line cupcake tins with sliced deli chicken (or ham). Fill each “cupcake” with tiny cauliflower or broccoli florets, the eggs and cheese of your choice. Season to your liking.
Bake at 350F or 180C for 15 minutes
