Okay, so I’m not super stoked about this recipe as I’m out of protein powder, so they’re lacking the usual higher protein content I like to see in my meals. That being said…

I had one, sad looking beet in my veggie drawer, and said “today is your day, my little friend!” The outcome are delicious beet pancakes that are healthier than your usual pancake, and pack a few more nutrients. (I’ll add below what I would do different next time).

The ingredients:
– 2 cups rolled oats turned into flour (not two cups of oat flour, two cups of oats)
– 1 large beet, cooked and cubed
– 1/2 cup plain yoghurt
– 1 frozen banana (can also use unsweetened apple sauce but I had none so used a banana)
– 1/4 cup egg whites
– 1 tbsp of baking powder
– 1 tbsp vanilla
– 1 tsp honey

Makes roughly 12 pancakes at about 75cal each.
So here’s what I wish I would have done different. I wish I would have added atleast 1/2 cup of water. It would have thinned the base out a bit, and perhaps made a few more pancakes. (I’m a volume eater). I also would have probably only used 1 1/2 cup of oats, and done a scoop of protein powder on top of it to make the protein content a little higher while not adding too many calories.

Anyways. A great recipe to start with, and add/subtract to. They were nice and dense, a hint of beet taste which I didn’t mind, but perhaps those who do mind can counteract that with a vanilla flavoured yoghurt, some more vanilla, chocolate chips etc.
