2 cups of raw or frozen broccoli florette
salt to taste
black pepper to taste
vegan butter to taste
1/3 cup vegan cream (cashew)
1 tablespoon nutritional yeast (optional)
CAULIFLOWER MASHED POTATOES:
700g potatoes
2 cups of raw or frozen cauliflower
vegan butter to taste
salt to taste
black pepper to taste
2 cloves of garlic, peeled
1/3 cup of vegan cream
nutmeg to taste

you love mashed potatoes but you think
it could be healthier well I agree with
you and for this reason I have here two
mashed potatoes with delicious
vegetables that is not going to
compromise the flavor instead it’s going
to increase the flavor hi there my
lovelies this is Jenna here welcome to
my kitchen I love mashed potatoes but
sometimes I feel a little bit guilty
because it’s not the healthiest thing to
eat but it’s so comforting it’s so
delicious and all that jazzz so let me
show you how I put it
together so first we’re going to cook
some
potatoes in some water and salt and once
they are soft remove them from the water
drain them and in the same water we’re
going to
blanch the broccoli and what is
blanching well blenching is a cooking
method which makes the vegetables taste
look and and feel better in a sense of
the colors are going to pop more so the
broccoli in this case is going to be
greener it’s going to be crunchier yet
cooked and it’s going to be firmer okay
instead of a that sogg instead looking
broccoli we’re going to have a firm
beautiful and a green one okay and we’re
going to cook it for a minute and a half
or rather simmer it for a minute and a
half remove them and put them straight
in a ice bath of water and ice leave it
there for a minute and a half and remove
them and set aside and now what we’re
going to do we’re going to mash the
potatoes along with the broccoli now you
can if you want to process the broccoli
not the potatoes because once you blend
or you process the potatoes it’s going
to activate the starch and it’s going to
be real really elastic remember we made
some cheeses using potatoes that’s one
thing that potatoes give you once we
activate the starch this happens okay so
we don’t want that to happen for this
reason we want to mash it and along with
that we’re going to chop very very very
finely the broccoli or you can process
it up to you and we’re going to add to
the potatoes black pepper salt
butter a little bit of a cashew cream

unsweetened and the minced broccoli some
people like to add to that vegan
parmesan cheese I don’t like that
whatsoever either you add the
nutritional yeast or nothing at all
because for this recipe you’re going to
feel for sure the little grains of uh
parmesan cheese and it’s not

good and now for the cauliflower puree
mashed potatoes pure we’re going to make
almost the same thing with the exception
we’re going to cook two
garlic cloves with the with the potatoes
okay so add the potatoes to the water
and salt add two cloves of garlic allow
it to cook until the potatoes are soft
and in the same water we’re going to
cook the cauliflower
fettes now we’re going to mash the
potatoes and the processed or finely
minced
cauliflower some vegan cream unsweetened
of course Salt and Pepper add some
butter or olive
oil a little bit of ground nutmeg on top
a knob of butter and

for getting more and more vegetables
into kids diets sometimes they don’t
like it because the way we cook them
okay like I said uh one video before one
video ago when I mentioned the eggplant
sometimes we don’t like the vegetables
because we don’t cook them properly and
I promise you this is going to be
amazing they’re going to love it and um
it’s a little bit more guilt-free
because you’re going to be eating um
healthier mashed potatoes so this is it

Always love your recipes chef Jana ❤ Why do you say mashed potatoes are unhealthy? Perhaps it’s what you add? Cook your potatoes and cool in the refrigerator overnight. 20% of the starch turns into resistant starch and is great for your gut microbes. Even if you reheat those cooled potatoes the resistant starch does not change back. Mashing through a ricer does not give gluey mash and makes beautiful creamy mash. Adding other less starchy vegetables with a high fibre content like broccoli is the way to go if you love eating mashed potatoes.
Delicious! Here in The Netherlands, we have similar dishes using all kinds of vegetables. They're best known as 'hutspot' or 'stamppot' … give it a try … you'll be sold too.💞

I never feel guilty about eating mashed potatoes–food of the gods!–but I love finding new ways to prepare them. I often get lazy and just mix my steamed veg with my mashed potatoes when eating, so why not mash them together to begin with? Great ideas; thanks for posting 🙂
