For this recipe, Derek takes it about 12 levels higher and does a classic “Chicken Fried” steak treatment to the shrooms with a shredded King Oyster Mushroom gravy. Man, we’re already swearing over here thinking about how go-d–m f–king amazing this tastes. Sh-t.

Hey look hey hey yeah hey welcome to the
wicked kitchen lockdown edition you guys
I’m still here in Arizona and being
influenced by American style food
because I’m American anyways but I do
live in the UK now well I will be back
there soon as soon as things are ready
I just anyways I’m getting off track you
guys this recipe is amazing you’re gonna
love it
chicken fried mushroom steak with
shredded gravy that holy crap you could
put that between bread oh wait till you
try this it’s freakin awesome you guys
you’re gonna love it stay tuned alright
so for this video I’m gonna show just
basically how to do a chicken-fried
steak and we’re gonna serve that with
mashed potatoes which we’ve already done
a video for and also I’m using some of
it in the gravy that we make I’m gonna
use some of these shredded King oyster
mushrooms I had one left
so rather than boring it would just be
shredding it on this video we have done
them in the past and I’m sure if you’ve
been following along you’ve you know
exactly what we do with those so just a
quick shred on those so we have that
ready I have some of the steaks that we
made when we did the garlic butter steak
so I had some enough left over and today
I’m gonna show how to use them when you
do an overabundance of steaks you want
to do or you just want to do this dish
it’s amazing so but this is the prep so
I treat this just like you would go and
how I used to go and buy raw meat except
this is mushrooms and it’s way freaking
better than any animal dead end so we
have that set we have the mushrooms I
have a little bit of baby spinach we’ll
sear off and what I’m gonna do is make a
wet dry mix this is just organic
all-purpose flour okay and then I also
have some panko but I’m gonna hold off
on the panko until after so I have the
flour here first and then for the wet
part I’m gonna use instead of use an egg
and milk I’m gonna use a little bit of
vegan butter I mean
vegan mayonnaise I should just slow down
so a little bit of the vegan mayonnaise
I’m using my favorite plant-based milk
right now and that’s totally a thumb
this happens to be like such a neutral
flavor and so good to cook with that
I’ve been using it with pretty much
everything if you haven’t tried out milk
yet you guys it’s freaking awesome so I
just kind of stir this up I want it to
be a little bit thick but I don’t want
it to be man easy so it’s just thin
enough just to replicate like a egg and
cream kind of replacement right so this
is the vegan version you don’t have to
use the mayonnaise if you don’t want you
can just use the milk but I find it
sticks a little bit better helps them
flowers and stuff stick a little bit
better so for the dredging part I have
an extra pan right here put this up here
well I’m gonna bread this I’m gonna heat
up the cast-iron pan so I have one
cast-iron pan I’m gonna add a good
amount of oil so there’s at least half
an inch or a centimeter above because we
are frying this this recipe is full on
fat full wicked if you’re no oil buff
this is not for you we have videos of
that over there and we show how to do
that but today I’m just showing how to
make plant-based products replace animal
products you don’t need to eat animals
this is a fully decadent wicked meal and
I’m gonna enjoy it and I think you’re
gonna love it as well so you have the
breading having that liquid so in the
flour I do want to season the flour so I
have one teaspoon 3/4 a teaspoon of
smoked paprika onion powder garlic
powder
pinch of oregano oregano oregano oregano
I’m gonna do a good healthy pinch of
black pepper and then a pinch of salt
and then just for shits and giggles you
guys I’m gonna add a pinch of the just
for the added vitamin b12 I get this
nutritionally use just a little bit into
that flour mixed so just to give it a
nice season flour there so first step is
gonna be to just dredge each of these
into a flour

okay so what I want to do here is just a
little bit different so I’m gonna put
that here like this do each one okay for
steaks today this is gonna be a really
amazing recipe man we used to make these
when I was growing up in the restaurant
business um
chicken-fried steak just comes from
using like some of the old prime rib we
used to use and just disgusting to think
about at the moment but we used to just
use the leftovers and bread them and fry
them and that’s chicken-fried steak be
right back okay so second part of this
well that oil is still eating up I’m
gonna add the panko right to the flour
so all I did so far you saw was just
spread it like and then put it here so
now I’m gonna go the other way you’re
just gonna mix this panko right in with
the flour so it’s a nice this was a
really nice coarse panko and sometimes
that’s really big and I like a little
bit finer so you can just do a quick
blitz in the blender to really make it a
little bit finer
all right so you’re gonna have a plate
ready and just waiting for this oil to
get hot enough so I just want to test to
make sure the oil Hut before yeah so
it’s getting there right there so take
one of these and then dip it right in
here one I use one hand for the wet just
drip that off
drop it in another hand for the dry all
right then just set that so that here
and just do that and I’ll get to and
then I’ll drop to in just a little drip
dry here I just want to make sure it’s
all in the nooks and crannies oh and
this one just fell apart so there’s two
pieces now that’s good
so just like this and then with these
while they’re here now bread I’m just
gonna start layer them right in
so while those are frying I’m just gonna
finish breading these and it’s probably
gonna be at least a minute or two on
each side so you want to get them nice
and golden brown on each side look at
that beautiful it looks gorgeous sweet
when you’re finished I like to take
paper towels and fold them onto the
sheet pan and then we’ll just place it
and allow them to drip dry under here
all right so this smells absolutely
delicious you guys so I’m just gonna
it’s done frying on each side drop it on
the hand like that thanks good okay now
to finish up the other to it so in the
last one they all look beautiful
check these out gorgeous all right so
I’ve left the oil in here I’m gonna turn
on I have another cast iron pan so I
want to sear off the spinach all right
I’m gonna use this pan for something
else but I’m gonna turn on the other
another pan I have another cast-iron pan
I’m just gonna get that going on high
heat I’m gonna take this leftover oil
and just I don’t need all of this oil so
kind of a lot I’m just gonna see I’m
gonna leave a good amount fair amount in
there a little bit about this this much
and this is what I’m gonna turn the oven
back back on I’m gonna turn the heat
back on and I’m gonna add these oyster
mushrooms the shreds right to this and
then to this I’m gonna add a little bit
more of the onion powder garlic powder I
have some fresh pepper corns here so
quick
I’ll break up the peppercorns nice a
good tablespoon of that now I’ll give it
some really nice rich deep flavors and
I’m also gonna add a little bit of the
smoked paprika not much just to have
some really good sized chunks in there
you can see how big they are
I’m gonna drop those right in this pan
should be hot so now we’re gonna start
doing I’m gonna add a little bit of oil
to that just not much just a little
that’s right you don’t know I’m just to
make sure nothing’s gonna stick there
crank it up the baby spinach is going
right in here
okay take a whisk these mushrooms look
good and they’re nice and crispy already
cause it’s plenty oil in there right all
I’m gonna do now let’s take a little bit
of the a little bit more flour onto the
bottom here just whisk that in check on
the spinach I’m going to turn the heat
off to the cast iron maintains the heat
and let that sit there for a minute then
I’m gonna start adding a little bit of
the oat milk right to this to finish off
the gravy just a little bit at a time
and incorporate in it

using all those flavors and spices that
we used to make the chicken-fried steak
we’re still right in here and add a fair
amount it’s just gonna keep whisking

you’re just gonna want to I it out and
you it will thick enough so just keep
whisking it and you’ll see what I’m
gonna add as well I’m gonna add another
tablespoon up so I have some plant-based
butter I’m gonna add it that definitely
going for a full fat full wicked so I’m
just gonna whisk that right in so it’s a
nice buttery gravy nice white sauce
around the pan good amount you could
split this into two but you know you
don’t have to I always cook more for
somebody else
what do freeze up whatever you want back
to gravy now this looks gorgeous right
as it is just at this point we’re just
cooking that flour out so it doesn’t
taste like a rough rue really whisk it
in there nicely
beautiful amber color if I haven’t added
its any salt so I’m gonna add a pinch of
salt I’m gonna lower the heat I have
this you have to taste this to make sure
it’s fine if you don’t need to have
anything else a quick taste of it it
needs a little bit more so that’s about
it okay I’m gonna shut this heat off and
then we’ll plate it up really quickly
okay so we have a little bit of the
mashed potato that we had made so this
is great mashed potatoes chicken fried
steak total decadence but to make you
feel better
this mashed potato recipe that we use
from this is super healthy so it kind of
balances out we get the wicked in there
steak and gravy

smothered in gravy this looks fantastic
let me get a garnish so I’m gonna use a
little bit of this red jalapeno and I
have some herb inside we’ll use there a
little bit of red on the side here just
for the color and they have some fresh
thyme I could have put some of the fresh
thyme into the flour mixture but we
didn’t not this time
but you guys that is it chicken fried
steak chicken fried mushroom steak with
a pulled shredded gravy mashed potatoes
baby spinach I mean what more do you

As I am not American, I am not familiar with “chicken fried steak” but this looks amazing..as do your other recipes. I am beyond terrible at cooking mushrooms but you have inspired me to visit an Asian grocery and pick up some ingredients to try this.
