Tofu:
– 1 block of firm tofu, pressed
– 2 teaspoons neutral oil
– Salt to taste
1. Cut pressed tofu block in half (lengthwise)
2. Drizzle with oil and sprinkle with salt
3. Place both halves on a preheated waffle iron (set to high) and cook until browned (about five minutes)

Marinated greens:
– 2 cups leafy greens (I like pea shoots and spinach best)
– 1 teaspoon soy sauce
– 1 teaspoon sesame oil
1. Bring a large pot of water to a boil.
2. Blanch greens for 30-60 seconds
3. Pour greens into a strainer and remove excess water by pressing them down with the back of a soon.
4. Transfer green to a container or bowl and add sesame oil and soy sauce. Mix well.

The brown rice is cooked in a rice cooker, and the kimchi is store bought (Nasoya brand). I assemble all components in a bowl and top with sriracha or chili sauce! ☺️
