1 hispi cabbage
Slice the cabbage into quarters & season with salt & olive oil. Cook into a medium heat pan until nicely coloured.

4 slices sourdough
1 stalk rosemary
1/2 clove garlic
1 lemon zest
Cut the sourdough into nice little cubes, coat with olive oil & grill in the oven. Finish with rosemary, garlic, lemon zest & salt & blend for a couple seconds.

2 egg yolks
2 cloves garlic
2 lemons
7 anchovy fillets
50g parmesan
1 tbsp dijon mustard
30ml olive oil
20ml vegetable oil
Salt + pepper to taste
Blend the eggs, garlic, lemon juice & anchovies, once it’s a nice paste, add in the dijon, & slowly incorporate the olive oil & vegetable oil. Finish with the parmesan.
