Rice balls ( arancini ) stuffed with cheese for vegetarian and prosciutto cotto ( ham ) for non -veg.
This recipe can also be stuffed with ( ragu ) meat sauce my favourite when we went to Sicily. Any rice dishes are my favourite.
I used arborio rice, soak before cooking in mushroom broth. It was sticky like sushi rice and the rice was holding together and easy to put the stuffings.
Cook 300 g rice 300 ml mushrooms broth exactly the same amount of liquid and rice. Cheese and ham for quick and easy stuffings. 3 Eggs, 50 gm semolina flour or all purpose flour and 100 gm bread crumbs; olive oil for deep frying.
