Inspired by reading through Joy of Cooking and The Flavor Bible, we came up with this Shrimp risotto with dill, Meyer Lemon, and creamy sheep and goat’s milk cheese. It was delicious.
hey welcome to uh this show we’re making
risoto today this is the first episode
so let me you know figure it out as it
goes have some fun cook some stuff I
have two books here so we’re going to
talk about books a lot I’m a freak I
have so many books so many cookbooks
they’re
awesome um they’re so inspiring and like
you can’t
learn um cooking any better way than
just cooking through books
reading about cooking and and just
having fun with it um and these are two
of my favorite books maybe two of the
most important books there are for
learning how to cook um they’re such
fantastic resources for anybody they’re
just awesome um Joy of Cooking if you
don’t have it you have to have it in
your kitchen it belongs in every single
Kitchen in the United States it’s an
American cookbook it’s the
quintessential
the most important americ cookbook and
every recipe in it is fantastic like
every recipe and you can find everything
in it it’s incredible and then the
flavor Bible and this is a little more
cheffy a little more about flavor and
it’s really like an encyclopedia
dictionary in that it really breaks down
flavor down to its Basics it’s really
incredible and finding different
pairings things go really well together
like so today we’re doing shm sh with a
risotto and we’re going to flavor it
with some sheep and goats milk the
risotto and Myer lemon and Dill and
that’s kind of you know digging through
the flavor b a little bit you know we’re
looking at the ingredients we have we
got shrimp we got some
rice now what can we make with it and
then start digging through these two
books you’re gonna find something real
quick that sounds great so we’re making
risotto um and then I’m just going to
read quick from it because I just love I
think it’s so important to
to read these whole things because
there’s so
much in a lot of these books that if
you’re just looking for recipes and you
don’t dig any further you’re missing a
ton with with these
cookbooks um
so enjoy cooking show you the recipe for
for
risotto I’m not really following it but
it’s a great recipe um we’re doing our
own thing here but it’s pretty standard
risoto recipe
it says nutrition
101 looking at nutrition how you eat the
mood or Spirit the beauty of the table
and the company with whom you enjoy a
meal also matters as a source of
satisfaction and renewal few daily
rituals have the extraordinary potential
of the act of preparing and sharing a
meal whether you’re feeding your family
friends or even strangers cooking can be
an expression of affection and
connection both of which are good for
the mind and the body
the conversation and social interaction
are usually the best part of the meal
isn’t that
awesome just uh just great great words
of of wisdom and I mean everything’s in
like the table setting right you want to
set a table it’s injoy
cooking hibiscus tea we got tea shrimp
tacos AR grotten
potatoes roast
chicken
Pesca tomato concas hey that’s a good
one everybody to learn tomato concas
croissants and the biscuit recipe in
here is
incredible it’s just an awesome sour
cream pound cake getting desserts now
you got
sus it’s
awesome can learn a
ton so if you don’t have it have it if
you haven’t cooked out of in a long time
pick it up and and make something and
just have a great time with it thank you

cooking our risotto
now we’re going to get our Heat going
here little medium heat a little canola
oil vegetable oil grape seed grape seed
grape seed oil is the best for this it’s
a little pricey so you know any kind of
neutral oil is
great we’re just going to let that get
nice and warm and we’re going to strain
out our stack here we got a vegetable
stack
I put some cabbage in here some
shallots some merer lemons just a little
my one wi lemon some carrots garlic
celery shallots you know that’s just a
bunch of vegetables that you got laying
around they’re going to make it taste
better you can also use you know store
bar
vegetable oil here we don’t want it too
hot burn anything we’re just going nice
and easy we’re going to sweat
wild cut Texas shrimp here put a little
garlic on those the rest of that
garlic go into our pot here the
shallots I don’t have enough stock for
that so we’re going to end up using some
water
but that’s how it goes
sometimes two four planting I
suppose three there we
go two to one rice
to
yeah that’s nice little
salt on there there you
know excess right don’t not trying to
pour $100 bottles of wine into risotto
but it’s like A14 bottle of wine I’m
sure it’s uh very tasty so pour that in
there
sh block this is
from it’s nice and thick not sticking to
anything beautiful shrimp
Texas I’ve caught we add our stock like
I said I’m going to have to add some
water I’m just going to add all that and
what you want to do is just pour enough
water so there’s you know like a h but
to really get it done fast and face as
we can give
them to cook nice and quick that’s what
we’re looking for so if we give them
space they’re not going
to but up against each other steal the
heat keep them insulated so just spread
them
out right we’re going to broil them so
we got our Broiler set to
high it says 550
degrees I’m down for
that we can get a little color on these
it’ be
awesome
dairy sheep and
goats really stir that real
good add our cheese
here that’s okay too it’s a good time to
add like an olive oil wanted that flavor
in there add some olive oil you know
we’re just add the whole jar add the
whole jar because what it’s asking for
there’s some black Peppercorns in there
that’s going to be okay those is going
to be too bad
this is salt and the
cheese fresh black
pepper give that a
taste is that
tasting once it’s done get really
close get that last here we got our
shrimp coming out of the oven those
Beauties got our
risotto
