going to do an old-time Texas chili on
the grill man good all right real easy
to do just need a few ingredients here
so we’re gonna start by doing up a
couple pounds of the ground chuck here
do it in the old black iron pan here and
then we want to cut up a couple onions
and if you close garlic I won’t show you
how to do that you know about that you
just cut pretty good sized chunks all
right throw them right in there with the
ground chuck may start to smell good
already
yeah all right now there’s uh there’s a
lot of folklore it goes around with kind
of Texas chili and factories as many
Texas chili recipes errs as there is uh
Texas that’s alright we’ll uh we’re
going to show you so your real old-time
Texas chili here this is live and do it
for gold since the mid 1800s more or
less all right so we got this burger and
we got those onions and garlic done you
don’t want to overcook those onions and
taro can just basically wanna soften
them up a little bit now this is
optional but this is some Texas brisket
we’re gonna we’re gonna come up cut it
up throw it in the old pot there now if
you don’t have any brisket handy then
you can just use another pound of ground
chuck now Texas chili
often probably cold a peasant student
came out of Mexico early 1800s and was
often served at cantinas Mexico in order
to lure India travelers and turistas and
many times it was free and served right
along with the liquor he’s often made
with leftover meats and the meal of
course it was a meat based with some
heat and had some chili now here I got
some homemade barbecue sauce and put
about two cups in now if you don’t have
barbecue sauce your homemade barbecue
sauce you can throw in some tomato sauce
it’s up to you and authentic Texas chili
is what you make basically chili without
being it’s all meat and look at that now
we need add some moisture and here
throwing in some some beer you can just
add water if you want that’s up to you
now we got to add some heat and got some
cayenne pepper here thrown in about a
tablespoon that depends how much heat
you already got in your homemade sauce
you decides how hot you want and here
I’ve got about a tablespoon of chili
powder and of course you want about a
maybe a half a tablespoon ground cumin
and then for some color and a little
earthy taste we have about maybe two or
three tablespoons of paprika again you
adjust these quantities the way you like
it and get it down it’s a good recipe to
start with all right let’s uh let’s stir
this up me you smell that
it smells good now this is one thing
range cooks didn’t have is probably
brown sugar but throw about a quarter
cup of brown sugar because I wanted to
sweep now here’s the magic of good
authentic chili it’s jalapeno peppers
I’ve got three big old jalapenos here
and these aren’t the fresh ones these
are the pickled ones I like to use the
pick of ones for the chili and it’s up
to you you can use fresh I like the heat
and flavor that these pickled chili
peppers are good
you know I’d like to throw the seeds in
again that’s up to you hey it’s almost
ready to eat now it’s not quite done now
we’ve got an indirect fire going there
and the charcoal on one side this gives
us gives us a lot of control on how much
heat we want in there and I just threw
in some chunk of hickory we want to
produce some smoke that chili takes on a
little smoky flavor right all right
about 45 minutes maybe an hour’s gone by
then a slow simmer this Texas chili is
ready to eat

what alright this is where I had a
little salt again depends uh how much
salt was in you a homemade barbecue
sauce so I’m just adding a little bit
more salt get it just the way I like
alright let’s serve it up

nothing like Texas chili I wanna and you
serve it with some corn chips and if you
like beans you want to serve your beans
on the side so that’s the way good Texas
chili is served at the table now here’s
something that’s not authentic Texas
chili and I like to add a little bit of
Jack cheese on there it’s all shredded
up that’s up to you and some corn chips
on the side hey Texas chili don’t get
any better than that fact we try a
little bit is right now

I enjoy most of your videos but I have to say this ain't Texas Chili. We never use sugar, and never ever add beans. We don't use BBQ sauce on our meat because it doesn't need it if the meat was cooked right.

This is nowhere near Texas chili. Chili is basic. Meat, peppers, onion, garlic, comino, salt, pepper, and time. No BBQ sauce… no brown sugar, no paprika. It's a stew… based on simple meats and spices. Please… get a grip. You are embarrassing the entire Lone Star State.

Nope. Not Texas chili. Maybe Mom’s southwest mess, but not Texas chili. I invite everyone to look up Terlingua Chili Cook-off in Texas the Granddaddy of all cook-offs in the US and, of course, Texas. Those are true Texas chilis. This video is southwestern beef stew. Sorry, truth is truth.

Looks guuud! I lived in Texas and we used what was local as far as smokin' woods. A blend of mesquite and oak chips with some Hatch chiles and good ol ShinerBock to boot! Keep the videos comin'!

in all likelihood Chili evolved from Pemmican, which was made with dried meat, tallow, and dried berries.
in that sense, Joe Roger's Chili in Springfield IL is more traditional than this by a LOT
