Straight forward NY strip. Salt. Pepper. And sous vide to 120 for an hour and a half with chives and olive oil.

Pulled and rested for 30 min. Then seared on the infra red grill (700 f). Rest for 8 min after that and sliced.

Had a caprese salad ahead of time. And a lb of steamers. Sides are steamed corn and sliced beets (certainly not fancy but I just love them with a steak).
