hello and welcome to my channel my name
is Emily Ros and today I’m going to be
going through how to make my feta spring
flatbreads this recipe believe it or not
has over 23 million views and honestly I
still to this day receive dozens of
messages from you guys saying how much
you love them you send me pictures and
it never ever fails to make me smile so
if you do give them a go please let me
know because I really really love
hearing from you when I first made this
recipe I became obsessed I became
absolutely obsessed they are so simple
and so so delicious they’re filled with
mint spinach garlic fatter and a handful
of other ingredients and are a perfect C
for scrummy dummy past scrummy dummy the
bread only requires two ingredients only
two you need self-raising flour and you
need Greek yogurt also before we go into
the recipe video I just want to say that
further through into the video I’m
actually sharing some recipe variations
for those of you who are vegan or
gluten-free or also just kind of want to
soup up the recipe and try different
ingredient in the filling I provide some
suggestions there so make sure to watch
that if you like okay so without further
Ado let’s dive into what ingredients you
need for the dough you’ll need 200 g of
self-raising flour and 170 G of Greek
yogurt and then for the filling get
yourself some feta cheese cream cheese
finely chopped fresh mint wilted spinach
and minced garlic now because I’m making
four flatbreads I’ve used 100 gr of
spinach that I’ve wilted down and
chopped up into fine pieces I also
recommend using fresh mint which I also
chopped up really finally then next up
get your favorite cream cheese this adds
yest it a creaminess to the filling and
balances out the tartin from the feta
for the feta use any kind you like just
make sure to crumble it up into little
pieces optionally leaving some bigger
pieces for the texture and lastly fresh
clothes with garlic that you can either
chop up or mints using a garlic Crusher
you can also use garlic granules but I
personally love using the fresh stuff
I’ve been listening to a handful of
nutrition podcasts like the Zoe podcast
and the food menic podcast recently I’ll
link them down below and they talk about
the benefits of organic food so I’ve
really tried to buy into the idea of
trying to buy organic staple ingredients
where I can like flour because firstly
in comparison to other organic
ingredients like fruits and vegetables
they’re not too expensive because you
can buy them in bulk I personally don’t
buy them as often as fruit and veg and
because not only does organic flour keep
its German brand intact unlike processed
flowers it can also just help our bodies
to process carbohydrates and help
regulate our blood sugar which is great
they also obviously don’t contain
artificial PES siid or fertilizers which
is even better now you can absolutely
buy normal sell Fring flour I just
wanted to share my recent nerding
session about organic foods with you so
next up is Greek yogurt it’s our liquid
for this recipe it provides the moisture
and softness for the dough I use Tesco’s
Greek yogurt um because it seems like it
has the perfect consistency for this
recipe so if you’re using a thicker
Greek yogurt you might need to use more
of it to just get the consistency right
for the dough um so once you combine the
flour and the yogurt in a big bowl Stir
It gently with a spoon and then get the
those hands dirty you want a light
slightly sticky soft dough honestly
there’s literally no need to work the
dough really it’s super low maintenance
and then once it’s kind of all together
set it aside covered in King film and
make your
filling so get your fresh Min and pick
off all of the leaves
that was a little bit of ASMR for you
there I hope it was very satisfying now
I’ve used about a handful of mint leaves
but you can use more or less depending
how much you like it then finally chop
them up using a very sharp knife next up
get your fresh spinach leaves place them
in a colander or Si and then under
boiling water until wilted like this
make sure to squeeze any excess liquid
out of it and then slice up into small
pieces get your Fetter and break it up
into crumbly little pieces you can also
leave some bigger ones too depending on
how much you like
Feta then grab your cream cheese and
place it into a bowl ready to then
combine with all of your other
ingredients as I mentioned I’ve used raw
garlic cloves because I prefer the taste
of them so finally chop them up or use a
garlic

Crusher time to combine all of our
ingredients to make the filling so in a
large bowl add your spinach mint leaves
cream cheese garlic feta cheese and
pepper give it all a Squish and a mix
until really really well combined and
that’s your filling
done okay now we’re going to jump in to
some recipe variations so for all of my
vegan and plant-based people out there
hello for you I have tried and tested
this recipe several times and it works
just as well so what I want you to do is
first you need to replace the Greek
yogurt with some kind of plant-based
Alternatives unsweetened coconut yogurt
unsweetened soy yogurt both work really
really well just make sure that you have
extra quantities of the self-raising
flour and or Greek yogurt or yogurt
because sometimes the plant-based yogurt
is much runnier than normal Greek yog so
you might need some more flour to
balance out the consistency of the dough
secondly with your cheeses make sure to
choose any kind of plant-based cheese
that you like so with the feta any kind
of vegan feta or you could use crumbled
tofu that you then season with salt
pepper and nutritional yeast for that
cheesy flavor plant-based cream cheeses
are pretty easy to find so just pick any
cheese that you like and also to be
honest if you like a certain vegan
cheese then use that and fill that up in
your flatbread it’ll taste delicious so
for all my gluten-free friends out there
I would recommend picking out your
favorite self-raising gluten-free flour
I’ve actually never tested it before but
I’ve had people messaged me saying that
they’ve used it and that it’s worked
really well so give that a go for those
who would like some more meat protein
almost acting like a sandwich like
that’s super fun you can either use some
precooked chicken so rotisserie chicken
or grilled chicken uh chop it all up and
then add it into the mixture you could
also fry off some ground beef and then
add that into the mixture so almost acts
like a kind of hamburgery Patty sandwich
delicious or for some more plant-based
protein add in some chickpeas some
lentils that will taste really really
delicious and will give you that extra
boosted protein for those who like it a
little bit spicy like it a little bit
hatut then you can do several different
things one you can add in different
spices to the mix so paprika or cumin or
chili flakes into the filling itself you
could also add in a freshh red chili
that would also be really delicious then
in addition you could instead of having
the mint sauce and olive oil topping you
can have some chili oil you just drizzle
over the top and lastly if you’re
looking to just soup up the recipe or to
have a different ingredient inside of
the filling then some of my favorites
are having chopped olives chopped Arch
choke heart so yum or some sundried
Tomatoes you can also swap out the herbs
and use parsley coriander basil they’re
all really nice I’ve actually made
recipes for several different stuffed
flatbread options so I’ve linked them in
the description below so go check them
out if you fancy and yeah just make sure

say that if you’re a little bit
apprehensive about making these because
you’ve got to make a dough and get your
hands dirty and all flowery and you just
don’t really know if it your Vibe just
please fight off those fears and give it
a go the dough is honestly so so easy to
make and requires little to no needing
so you’ve just got to lightly work the
dough and it comes together all in one
piece then you just slice it into four
roll each piece into a bow and then
gently flatten it place a spoonful of
the filling into the center of the dough
and then bring up each side of the
circular wrapper and pinch and seal at
the center there’s no pleating or
anything intricate it’s just super
simple roll the stuffed dough over and
then lightly pass it down to form a
thick Patty it should look something a
little bit like this a handful of you
have messaged me to say that you made
these for a dinner party you hosted and
I absolutely love that you then
mentioned the fact that your friends
were begging you for the recipe by the
end of the meal so that’s a great
compliment and if that doesn’t convince
you to make them I don’t know what will

right time to get out your Frying Pan
People I’ve used a non-stick pan and
heat it up to about medium heat once the
pan is hot add in your breads one by one
make sure to not add any oil you want
the breads to be dry and fluffy cook on
each side for about 45 minutes until
Brown you can also optionally add on the
lid to create an oven effect okay whilst
we’re letting the stuff fet flat breads
cook and do their do their thing going
to answer some frequently asked
questions that you guys have for me so
number one can I use a different type of
cheese instead of feta absolutely so I
love feta CU it adds like a really nice
spring summery Tang to the Festa spring
flat bird itself but if you don’t want
to use Festa you can use goat cheese you
can use ricotta just any kind of cheese
you like really can I make these
flatbreads ahead of time 100% yes okay
there are several ways you can do this
one is you can prepare the filling and
prepare the dough separately and then
store them for up to 3 days until you’re
ready to go and then you can assemble
and make the flatbread and cook the
flatbread there and then number two is
that you can make the whole flatbread
ready to go and then wait for it to cool
and then store them in airtight
containers for up to 3 days then when
you’re ready to eat them you just heat
them up in the oven for about 5 to 10
minutes until they’re piping hot and
then they’re ready to go number three is
that you can freeze them so you can make
the whole flatbread and let it cool and
then plunk them in the freezer for up to
3 months and then once again just leave
them to defrost and then heat them up in
the oven now once again the texture
might differ a little bit if youve
frozen them but they should still taste
super delicious can I add any extra
ingredients into the filling darling of
course you can you can add so many
different things you can add chopped
sundried tomatoes you can add roasted
red peppers or even sauteed mushrooms
they would be super delicious okay next
question can I use dried mint instead of
fresh
mint yes but I just feel like dried mint
has it’s really bitty and it’ll get
stuck in your teeth and I just don’t
feel like it has that freshness that
fresh mint actually has obviously if
it’s the only thing you have then go for
it but I would highly recommend trying
to use fresh mint can I make a larger
batch for a party a gathering or just
because I’d like a little snack now and
again 100% this recipe is so brilliant
because you can basically just double
triple quadruple the quantities and
you’ll get the same result and a
recommendation if you’re cooking
multiple in different pans and then you
want to keep them heated just put the
oven on lowish temperature and then wrap
the flatbreads in tin foil and put them
on a tray and keep them warm in the oven
like that okay the big reveal look how
cute these have turned out you want them
to be patchy Brown on each side like the
face of the Moon and they should be
light and
fluffy now for the mint sauce dressing
all you need is some olive oil and a
store-bought mint sauce I love Coleman
cuz it’s slightly sweet Tangy and super
minty so get yourself a little bowl and
add in some mint sauce followed by some
olive oil give it a good old mix and
then you’re ready to go
