Cooked for my omni family yesterday

  1. roasted asparagus tartlette with lemon foam and asparagus tuile

  2. vegetable and beetroot “tartar” with radish, avocado puree and herb emulsion

  3. braised leeks with whipped ginger-lemon-mushroom sauce, leek lattice, leek powder and herb oil

  4. potato terrine with celeriac puree, confit tomatoes, grilled zucchini and onion reduction topped with salt pearls and almond sour cream

  5. rhubarb cardamom sorbet on “muesli” crumble, white chocolate and vanilla cake with strawberry and pumpkin seed oil

  6. improvised tiramisu with black cherry and chocolate veil

Feel free to ask questions, I will try to answer everything as best I can. I can’t provide full recipes for the entire courses, because each component is its own full recipe and I improvise a lot. But If there are specific parts of a dish you want to know recreate I am happy to help.

    Well I guess first question: are you a professionally trained or experienced chef? Does this require equipment a layman kitchen won’t have? 😂 looks amazing btw
