The white castle sliders look killer, but Man the Mock McRibs are genious! They’re shaped perfectly

For our “mcribs” we use Serious Eats / Kenji Lopez recipe.
We use left over smoked rib meat in the ground patty and it’s so good.

The McRib is terrible and I’ve never had white castle. But maybe there’s some major nostalgia going on here for you? Seems like a lot of extra steps but whatever makes you happy that’s for sure.
I personally would just make smash burgers. I love your onion to beef ratio though. Tasty.

Big Whitecastle fan here. I planned to make them the way the store does, dehydrate then rehydrate the onions. The hydrated onion mix has lots of extra water that is what steams the patties.
