**ROASTED BROCCOLI SALAD WITH MISO-CAESAR DRESSING**

**INGREDIENTS:**

– 1 lb. broccoli florets (approximately 8 cups)
– 6 oz. uncured bacon (preferably no added sugar)
– 2 medium shallots
– Gluten-free Panko (optional)
– Good quality extra-virgin olive oil
– Avocado oil mayo (e.g., Chosen Foods brand)
– 1 tablespoon fresh lemon juice
– Miso paste (white or sweet)
– Anchovy paste
– Worcestershire sauce (or lower-sodium tamari)
– 1 small garlic clove

**SUBSTITUTIONS/ADDITIONS:**

– Make Vegetarian: Replace bacon with roasted cashews.
– Anchovy Paste Substitute: Use 1 tsp. minced capers.
– Make Gluten-Free: Use gluten-free Panko or crush your favorite gluten-free crackers.
– Add Dates: Include 2 pitted and chopped Medjool dates for sweetness.
– Make Keto: Suitable for a keto diet.

**INSTRUCTIONS:**

**Step 1:** Preheat oven to 425ºF.

**Step 2:** Roast broccoli, bacon, and shallots on a rimmed baking sheet for 30 minutes, tossing halfway. Broccoli should be crisp-tender, and bacon crispy.

**Step 3:** Combine mayo, lemon juice, miso paste, anchovy paste, and Worcestershire for Miso-Caesar Dressing. Add olive oil gradually, whisking until smooth.

**Step 4:** In the residual bacon grease, mix Panko. Bake for 3-4 minutes until golden.

**Step 5:** Transfer all ingredients to a bowl. Top with Panko, Miso-Caesar dressing, and cheese. Toss well and serve warm!

**SERVING SUGGESTIONS:**

– As an Entree: Satisfying for lunch on its own.
– With Grains: Spoon over quinoa or farro for extra sustenance.
– As a Side Dish: Perfect accompaniment for Slow Roasted Salmon or Shrimp Skewers.
