Grilled Portabella Cheesesteak Sandwich

Ingredients:
4 large Portabella mushrooms, sliced
1 red bell pepper, cut into rounds
1 green bell pepper, cut into rounds
1 medium red onion, cut into rounds
3 small cloves of garlic
2 tablespoons of fresh parsley
4 tablespoons of olive oil, divided
6 slices of vegan cheese
1 14-inch sub roll
1 tablespoon, Blazing Beast (Nutritional Yeast Blend) Optional

Instructions:
Using a mortar and pestle, crush the garlic and parsley into a paste. Add a sprinkle of salt and 2 tablespoons of olive oil and 1 tablespoon of the *Blazing Beast; mix to combine. (nutritional yeast & chili pepper flake mix) Optional

Heat a skillet over medium-high heat and add 1 tablespoon of olive oil. Sear the sliced mushrooms until cooked through, then set aside. Mix in the garlic-parsley paste to marinate for a few minutes.

In the same skillet, add another tablespoon of olive oil, followed by the peppers and onions. Sauté for a few minutes until softened, then remove from the pan and set aside.

Toast the sub roll. (optional)

Return the skillet to heat. Add the mushroom mixture along with the peppers and onions, and sauté for 2 minutes until heated through. If making two sandwiches, divide the mixture into two portions in the skillet. Top each with vegan cheese slices and allow them to melt.

Place the cheesy mushroom and vegetable mix into the toasted sub roll. Wrap the sandwich in parchment paper and serve warm.

first let’s banging out all the prep
four PTO Bellow mushrooms for this going
to slice them pretty thick
all right next up will be the onion I
can’t eat onions pretty
thin break them all up make sure they’ll
cook evenly
later Peppers it looks like they just
use green but I’m going to use a green
and a red for
color just cut out the middle again they
do the rounds so we’ll try to keep them
theme just cut them thin careful cuz
it’s so wide save these end bits for
salad all right so how I’m going to
improve on the recipe is I’m going to
use three cloves of garlic going to
Pound The Garlic into a
paste pinch of salt help break it
down I have some parsley here I’m just
going
to going to use about half of this P

just mix that in yum that right there is
a delicious mixture all right so to make
it even better than just the garlic and
parsley and oil I’m going to add some of
that blazing Beast seasoning little
extra protein stir that right into it
and that’s going to add a little bit of
extra protein and then also give it a
nice Umami kick so it looks almost like
pesto so we have our prep done that’s
the hard part out of the
away I’m going to add a little bit of
the oil add a little bit of salt to the
pan I’m going to add the mushrooms you
don’t have to do this but I am going to
because it’ll help along with the
cooking and I want to create more of an
even sear across all those mushrooms
it’ll just help push the water out a
little faster what did he just say when
I hear the sizzling start to slow means
a lot of the water is coming out of the
mushroom and then I’ll pull it
off smells

I’m going to add this back to the
bowl and then the pan back to the fire
and while that pan is reheating I’m
going to add our parsley garlic and
nutritional Beast mixture right to the
mushrooms flavor all those mushrooms I
don’t need to add any more salt cuz it’s
salty enough I’m going to add some black
pepper though and then I’m going to let
this sit so I know all the mushrooms are
coated a little bit more oil in the pan
we’re going to go in with our onions on
one side peppers on the
other going to stir these up sauté this
would be a great mushroom Monday dinner
lunch hell I didn’t have this for
breakfast onions to get those nice
crispy bits on there the peppers nice
and wilted already smells delicious get
it to a point that you’re happy with
just take it off the heat add them to
the
Bowl bread I got this from the local
bakery in town a nice sub roll and I’m
just going to cut this in half and then
in half again so I got two knives halves
toast these till they’re nice and warm
while those are toasting taking some
baking sheet paper parchment
paper there’s one there’s two in that
same pan Which is ripping hot I’m going
to add a little bit of olive oil the
mushrooms peppers and onions we’re going
to mix this
up I’m going to divide it into two and I
don’t have any swiss cheese but I do
have like a smoky vegan
cheese covering and helps it melt a lot
easier turn off the heat I’m just going
to put them in as neatly as possible
