Dry Ingredients:
3/4 cup (150g) granulated sugar
1 ¾ cups (265 g) all-purpose flour
½ tsp sea salt
½ tsp ground nutmeg
2 tsp baking powder

Wet Ingredients:
½ cup vegetable oil
2 large eggs
2 tsp grated lemon zest
¾ tsp pure almond extract
egg wash: 1 egg mix with 2 tbsp water

¾ cup whole raw almonds
½ cup dried raisins

Preheat Oven to 325 Fahrenheit / 160 celsius
Prepare baking tray with parchment paper lined in

Instructions:
1, In a large mixing bowl, combine sugar, eggs, vegetable oil, lemon zest to paste like, then add almonds, raisins & almond extract combine again.
2, Sifer through all dry ingredients into wet. combine well together into a sticky dough.
3, Dust flour on work surface, transfer dough on the surface, dust more flour on top of dough, then divide the dough into 2 logs, shape them into 10-inches long. place them on the baking tray and pat down to flatten (flour your hands to prevent sticking).
4, Brush the logs with the egg wash first, then bake for about 35 minutes, until a rich golden brown.
5, Remove from oven, cool the logs on the baking tray for 2-3 minutes, using bread knife to slice the logs into cookies just over ½-inch thick.
6, Place them back on the baking tray upright, leaving a little space between them, return them to oven continuingly bake additional 20 minutes, until lightly browned.
7, Remove from the baking tray to cool completely .

hello everyone so today I’m going to
make a basati Italian basati it’s not
going to be totally traditional because
I do not have a cran Dry cranberry at
home right now so instead I’m going to
use reasons I have a green and a red red
rasins Al together um this is a half2
cup reasons and we have egg sugar lemon
for lemon zest and some
nutmeg I have a fresh pure almond extra
here and I have this is one cup of raw
almonds here and some all poers flour
okay let’s get to it I’m
excited
sugar
egg vegetable oil
good amount of lemon
zest I love the scent of lemon so I add
them little
more and I’ll give a good mix and
combine them all

together this color makes you happy
doesn’t it it makes me very happy when I
see this super glossy y yellow color and
smell the scent of a lemon makes me very
happy all right raw
almond the one or 1 and 1/2 teaspoon of
almond extra give a good
mix and lastly let’s add instead of a a
dry cranberry that’s more traditionally
Italian buscatti using dry cranberry but
I don’t have any at home so now I’m just
going to use rasins to replace the dry
cranberry mix them all
together this way when we bake the
basati the almonds and raisins will not
burn by mix them into the wet
ingredients right now okay the wet
ingredients is complete next we’re going
to do dry ingredients 2 teaspoon baking
powder allpurpose flour half teaspoon of
nutmeg half teaspoon of salt sier this

through there you go and then give a
well mix combine all ingredients

sticky this is a sticky sticky dough and
now we’re going to transfer this to
working surface that’s some flour
because it’s really really sticky
dough and that’s a little more flour on
the surface top of the dough just a
shaping

into a
log we’re going to separate this dough
to two
portions and shaping both portions into
a
log that’s good shaping the second one
into a log as
well
transfer onto the
[Music]
tray when you bake it will spread out so
much so make sure you have enough of
space in between those two logs I have
already preheat oven to 325 fah so now
make sure there’s a distance between two
dough and before going oven my oven is
preheating 325 we’re going to brush with
with egg wash evenly to give that shine
this is so fun to make basca
again so this is one egg mixed with a
two tbspoon of
water
excellent and now they’re ready for oven
325 Fahrenheit deg and we’re going to
bake for about 35 minutes that’s a first
bake just learned the word basati in
Italian meaning baked twice so the first
bake is 35 minutes all right basati in
oven there’s a 1 minute more to go and
then we’ll remove from the oven and cut
it divide them going for a second bake
okay guys check this out after first
round of baking about 35 minutes it
turns out super pretty and brown now we
need to cut it divide them into strip of
bses and let them cool before we do the
second round of

baking so use bread knife to slice
basati to evenly portion and replace
them on the baking tray upright like
this then we’re going to send this tree
in to bake second time about 20 minutes
only keep watch for eye once you see
basati turn to Golden Brown and that is
time to take them out of the oven the
reason we bake second time is because if
you only bake once they will still but
if you bake second time you can keep
them in the cookie jar for
weeks they’re looking so good okay I’m
going to pop them into oven again for 20
minutes oh my God just take a look at
this this is absolutely
beautiful so perfect I’m really really
happy beautiful
color here you have it classic basati
the perfect basati should have a nice
textbook structure like this crispy yet
soft when dunk in the coffee it does not
fall apart and now I’m ready to brew a
cup of coffee enjoy with this basati
