Good rule of thumb with salmon is to cook it as little as possible. I just want the uncooked pink tmin the middle to turn to the lighter cooked colour. But only just. But this looks tasty and juicy.

Overcooked. The easiest way to check salmon (or just about fish) is push a knife or fork through it. If you get little to no resistance, you’re good.

For people that say “lost it’s color from overcooking”. No that farm raised salmon never had color. Wild salmon won’t loose it’s color, regardless of how is cooked.

Overcooked, remember, you can eat salmon raw, and the center should still be raw when you take it off the heat.
