►► INGREDIENTS
6 New potatoes (sliced into rounds)
2 cup(s) Spinach
1 tbsp Olive oil
0.5 Red onion (sliced)
1 Large garlic clove (minced)
0.5 tsp Ground corriander
0.5 tsp Ground cumin
0.25 tsp Turmeric
3 Tomatoes (roughly chopped)
4 Large eggs
0.5 Chilli
1 Small bunch of coriander (finely choped)
►► COOKING INSTRUCTIONS
Preheat the grill to 180*C.
Whisk the eggs with a little salt and pepper and set aside.
Cook the potatoes in a pan of boiling water for 6 mins, or until tender.
Drain and leave to the side.
Meanwhile, heat the oil in a frying pan over a medium heat.
Add in the onion and cook until golden.
Stir in the garlic, ground coriander, ground cumin, turmeric and chilli, cooking for 1 minute more.
Stir in the cooked potatoes, making sure to coat them thoroughly.
Add the tomatoes and spinach and stir until the spinach has wilted.
Switch to a low heat and pour the egg into the pan.
After about 2 minutes, put the pan under the grill for 4-5 mins, or until golden.
Slice into wedges.
Serve with a side salad and enjoy!
