Tried Kenjis new york pie again this week,and had pretty solid results.

Last week I had a miserable time with it. I first started with my food processor and it almost burnt it out. I switched it to my stand mixer to finish but it was still hard to handle. The hard to handle part carried over to making, and I struggled hard with ever pie.

This time I went straight stand mixer for about 10 mi utes. I used my bench scraper to help move it as needed and split it up, that helped a ton. I did 48 hours cold, counter for about 3, and the results are here to see.

A question for ooni frya owners. Can you control your temps to keep around 500? I did this in the oven,but running it at 500 for almost two hours heats the house a bit,and definitely creates smells the wife doesn't like. I want to use my ooni but I am nit sure I can control the temp that well.
