hello I’m chef Tom welcome to fortune
cooking today I’m going to show you how
to make a very common simple dish called
ginger garlic broccoli so you see I have
a pot or wok of the water boiling
how about 1/2 inch you don’t want to put
too much with the water you just want to
have the broccoli steamed a little bit
or you can just even stir-fry it with
raw which is fine so now I’m gonna put
my broccoli here and I’m just gonna
gently stir a little bit and cover up
for about 3 minutes does what I need
okay after 3 minutes that’s what they
look like you don’t want to over cook
the broccoli so this is perfect it’s the
still crispy at this time okay so what
you’re gonna do you need to drink this
out make sure nice and dry before you
stir-fry okay first we’re gonna make the
sauce for the ginger garlic broccoli
just one teaspoon okay small little bit
at this point I make my garlic a lot of
garlic
yes mother ginger just balance out the
flavor
soak a little bit and you can find my
recipe below my description I will write
it out for you okay go like this nice
smell mmm
breaking a little bit here we go so I’m
Cherie cooking wine or you can add just
regular white wine or salty wine get up
now we’ve put 1/2 cups of water I want
to make a vegetarian well you can make
it as a chicken stock which is fine too
just might have couple just the water
put the boy a little bit and then put
some soy sauce here we go
brown sugar to balance the sweetness
[Music]
some lemon juice you can use for it all
you can use this one spine – here we go
and the most important thing is more to
make it nice and sturdy bubbly and you
want to change the socks and you want to
make sure the sweet and sour everything
is balanced hmm
maybe a little bit sugar just move it
here we go okay you want to make sure
the sauce is nice and cooked let the
flavors all cook together
broccoli as well a lots of water or oil
to put lots of oil the blocker will
actually work we’ll eat all the oils so
we end up really greasy which is no good
that’s why I want to make the sauce
first there we go now it’s ready you’re
gonna stick it up with the cone start
like that
there we go
make it nice and thick see how thick
that is pretty shake put it date nice
perfect you want to see the bubble like
this you want to bring the sack leg like
this and only drizzle a little bit at a
time
see that okay now city royal dress like
this not like the one tablespoon
together soon that will become honest
mind dry play it quick toss okay let
them cook the temperature drop a little
bit let them cook just for a half
minutes now if you go otherwise sabaki
have a lot of juice in the broccoli will
come out you don’t want to be really
soggy yeah what if you like some might
cook still crispy and a nice flavor
coming out or the broccoli done ready to
say yes your ginger broccoli vegetarian
with garnish garnish some of the green
onion it’s really delicious very healthy
it would be a perfect side dish
alright I hope you liked the video
please comment and subscribe I will see
you next time

Let me guess… You add ginger and garlic sauce?
Thank you!
I need thicker sauce
I've tried this recipe 4 times now and on the last one (tonight) I nailed it. It's not as easy as it looks and if you're adding things to it you'll end up with a mound of dishes.
Some tips:
Chicken stock for the sauce but you can use any flavour.
You can add anything else to the sauce like Worcestershire or soy but nothing is required. Just have your broth, sugar, lemon squeeze and sesame oil. If you have cooking wine even better. You don't need to measure any of these (except broth there'll be more of), just add a chug of each in equal amounts.
More broccoli, more sesame oil. I used a whole cap for 3 heads. Not too much but certainly not too little. Get it right on the broccoli and stir.
After the broccoli is cooked put it under cold water to keep it crispy.
Spin the broccoli to remove excess water or when it's plated the sauce will be watery and won't stick. You can also leave it for half an hour to dry.
I use 1 cup of broth per head of broccoli. 3 cups of broth needed 2 tablespoons of corn starch.
Do a ratio of 2:1 ginger to garlic or the ginger flavour will disappear, use a lot of garlic if making 3+ heads.
Add diced chicken/beef and caramelized onion.
This dish absolutely slaps. I posted it on r/goodfoodbadpic.
Thanks for showing me how to be a broccoli master.
