13lb Costco Sirloin Tip Roast over Kirkland BBQ Hardwood Pellets with Montreal Steak Spice.
4 hours at 225°F (brought to room temp first). Took it out to rest at 135°.
My husband has been smoking meats for a few years now. We've done a few briskets, but we've never done a roast. He brought home this beast for a family gathering, and I was responsible for figuring out the cook temp/time. It was a little stressful, and I was very worried about overcooking it. Online advice said to take it out at 120-125°, but I underestimated how quickly the temp would rise from 112°, and ended up taking it out at 135°. I was really worried I had overcooked it, since I knew the temp could raise another 10° while resting, but it came out perfect!
