I usually do it with shoulder but thin chops work just as well and save you prep time. Ignore the baking part you’re gonna marinade and skewer to grill hot/fast to get some char so the thickness is irrelevant. I can rarely find perilla or balm but basil (thai or regular) is close enough.

In Korea they’ll just cook these in an pan and dip them in sesame oil with salt and pepper mixed it. You can make some lettuce wraps with rice and add some scallions marinated in sesame oil, vinegar, soy sauce, sesame seeds, and red pepper flakes.
It’s called Samgyeopsal but it’s normally made with pork belly

Schnitzel !
That’s a common cut in my neck of the woods. We grill them all the time, just need to babysit the meat.
But also as u/PoemSpecial6284 those are perfect for schnitzel.
Great on the grill. Throw it on a bun with a bit a sauce. Baby, we got a stew going. Maybe your an onion and pickle person. Who knows?!

I marinate those in Korean bbq sauce all the time and then sear em a couple min on each side. Serve with rice and kimchi and yum yum yum!
