Creamy polenta with Walnut, Gorgonzola and Braised Lamb
Ingredients:
• 350g ground polenta (cornmeal)
• 2 cups salted water
. 2 whole milk
• 60g chopped walnuts
. 60g gorgonzola cheese
• 30g butter
• 100g grated parmesan cheese
. 150g braised lamb ragout
. Fresh basil
Instructions:
1. In a medium saucepan, bring milk and water to a boil.
2. Gradually add the polenta to the boiling water while whisking continuously to avoid lumps.
3. Reduce the heat to low and simmer the mixture, stirring frequently with a spoon. This can take around 20-30 minutes. The polenta will thicken and should pull away from the sides of the pan.
4. Add walnut, and gorgonzola stir well, add butter, and grated parmesan cheese.
5. Continue to cook for a few more minutes until the polenta reaches your desired thickness and consistency. It should be creamy but still hold its shape.
6. Once it’s done, remove it from the heat and add basil leaves. Add polente to the serving plate. Scoop the center of the plate to make well.
7. Serve the polenta hot, with warm braised lamb ragout in the middle.
You can also customize your polenta by adding herbs, roasted vegetables, or your favorite sauces to create a variety of flavors. Enjoy your homemade polenta!
