This is my quick and easy recipe on how to cook the PERFECT ribeye steak (medium rare)

INGREDIENTS

14oz – 1&1/2 inch thick ribeye steak
25g unsalted butter
10ml olive oil
3 garlic cloves
3 sprigs of rosemary
Salt
Black pepper

METHOD

1. Pat the steak dry with a paper towel
2. Season the steak and the chopping board
3. Rub the steak in the salt and black pepper
4. Leave to rest at room temperature for 30 minutes
5. Wipe the chopping board clean
6. Crush the garlics to enhance the flavours
7. Drizzle olive oil in a cast iron pan on a heat high
8. When smoking, sear the steak for 3 minutes
9. Turn over and sear for 2 minutes
10. Add butter, garlic and rosemary
11. Baste the steak for 1-2 minutes
12. Leave to rest for 5 minutes
13. Season with salt and black pepper

Internal temperature if using a meat thermometer

120-125 °F (48-51°C) for rare
130-135°F (54-57°C) for medium-rare
135-145°F (57-62°C) for medium
145-155°F (62-68°C) for medium-well
155°F+ (68°C+) for well-done

Drizzle olive oil in a cast-iron pan on a high heat
When smoking, sear for 3 minutes
Turn over and sear for 2 minutes
Add butter, garlic and rosemary
Baste the steak for 1-2 minutes
Leave to rest for 5 minutes
Season with salt and black pepper
