Hello fellow baristas, I am trying to do the pegasus however I am struggling doing the legs and the head because the milk kind of spreads on top of the crema. Also by the time I do the head the milk is super thick so i cant get a thin shape.Yet if it make the milk any thinner I dont have anything foam left for the legs/head.

Picture one is in a double shot and pitcure two was in a triple shot. Picture 3 was in a small cup with macha, the milk dosnt spread in matcha like it does in our espresso.

I have mastered other patterns like the swan, flying swan, eagle, rabbit, squirrel, rosseta, tulip, rose, seahorse.

This one is the hardest and I dont know if its me or the milk/espresso because our milk is really temperamental. One batch is nice and silky smooth and other times its more 'sticky' and dosnt flow through the coffe really well.
